BBQ Pulled Chicken Whole30 Style

BBQ Chicken & Sauce

“Shut Up!”  That’s what you will say a few times after you start eating this BBQ Pulled Chicken.  I promise.  It’s so stinkin’ good!  This recipe was inspired by a recipe that The Pioneer Woman posted probably a decade ago by now.  It’s not at all the same, just inspired by it when drool fell out of my mouth reading about it one day.

I then decided to make this a little my own a few years ago, and it has been a huge hit in my family since.  During my Food Freedom, I realized I hadn’t made it quite some time.  And for good reason.  The BBQ sauce alone was full of sugar, preservatives.  Then the beer I would toss in from time to time, oh and the Canola Oil I cooked it in.  Lord, Heather, get a hold of yourself.  I know, shame on me.

Well now, we are on track, it is GAME DAY, and I need a dang BBQ recipe that makes me happily enjoy the game right along with everyone else.  Enter this recipe.

My favorite way to serve this BBQ Pulled Chicken is on Sweet Potato disks, or “buns”.  Roasted with just a bit of Olive or Avocado Oil, Salt, and Cinnamon, oh my gosh, I just drooled again.  Another delish way is to top a baked potato with it, just eat it plain, on a salad, or piled on chips for nachos.  Endless possibilities my friends.  This makes a good amount too, so there won’t be any shortages for leftovers.  Unless your friends realize how good it is.  I can’t help you there then.  Well, yes I can, because I know what I do.  I store some in the back of the fridge before everyone gets here, so I KNOW there will be leftovers.  You’re welcome (I didn’t just sing that in my most Maui way, I promise).

With just a few common ingredients and my Whole30 BBQ Sauce recipe, you can whip this up real quick before any tailgate, crowd you are hosting, or just a bunch of hungry kids.  Don’t even tell them it’s good for them, okay?!

Instructions
  1. Pre-Heat oven to 300°
  2. Heat 2 Tbsp Olive Oil in a Dutch Oven on Medium-High heat.
  3. Salt and Pepper both sides of the chicken breast. Once oil is hot place as many chicken breasts in the oil to get a hard sear on them. So don't over crowd your pan. You may have to work in batches.

  4. Sear both sides of every piece of chicken. You aren't cooking these all the way through. It should only take about 2-3 minutes per side. Remove them from the pan to a plate while you continue with each batch.
  5. Add the remaining 1/2 Tbsp of oil back to the pan where you cooked the chicken. Add in the sliced onions and the whole cloves of garlic. Season this layer with Salt and Pepper.

  6. Cook these until the onions have begun to soften, about 4-6 minutes. Then add the deglazing liquid and scrape all of the burnt or dark spots of the pan to incorporate all of that flavor.

  7. Add the BBQ sauce and stir until combined.
  8. Turn off the heat and submerge the chicken breasts back in the dutch oven under the sauce and onions. Make sure the chicken is covered. Add more sauce if you need to.
  9. Put a lid on the dutch oven, and pop it into your 300° oven for 2 hours. Check periodically with a fork to see if it will shred easy. If it does, then you are done.
  10. Shred all of the chicken with 2 forks in the dutch oven. Once you see a whole clove of garlic, SMASH IT! It's going to be so yummy and roasty in the sauce. Stir to mix all of the saucy goodness with the pulled chicken. Now serve it up!
